CASHEW NUT CHEESE
A delicious dip or spread on crudites/crackers...
1 cup cashew nuts (soak for few hours)
1/4 cup lemon juice
1 clove garlic
A little salt
Blend the above until creamy.

Cut an avocado in half, remove the pit and top with sliced cherry or plum tomatoes, sprinkled with olive oil, lemon juice & nuts.

1 bunch kale (cavalo nero), 1 tbsp coconut oil, a sprinkle of sea salt and sesame seeds.
Destalk kale, tear into bits, sprinkle with oil, sea salt, sesame seeds & bake for 10 mins til crisp.
